There are times when you will need more then one of the other classes. The plan you're looking at is a challanging raid set up for sure, but for forming a guild I'd definately say you should be widening your search quite a bit. Obviously you're not going to want to take 6 or 8 druids on, but you'll definately appreciate the wiggle room by recruiting more then what you expect you'll need for raiding. People will have work and school and family commitments and such.

Making a new guild can be rough, but i like where your going. Your setup seems perfect for actual raids, but the chances of the exact 18 you mentioned being online all at same time and having enough time to raid is miniscule. Shoot me a tell in game on elindal and i'll do what i can to help ya out.
